Nam Jim Sam Rot (Thai Three Flavor Sauce)

The three flavors here are sour, spicy, and sweet, and you can adjust any of these by altering the ingredients to your palate.

Ingredients

  • 3 fresh Thai chilis (i.e. bird's eye)
  • 6 garlic cloves
  • 3 tablespoons tamarind paste
  • 2 tablespoons fish sauce
  • 2½ teaspoons white sugar
  • 1 tablespoon water
  • 2 tablespoons neutral-flavored oil (i.e. avocado, canola, etc.)

Steps

  1. Add the chilis and garlic to a mortar and use a pestle to pound into a coarse paste.
  2. Combine the tamarind, fish sauce, sugar, and water in a separate bowl.
  3. Heat the oil in a wok or frying pan over high heat.
  4. When the oil is shimmering, add the chili and garlic mixture and stir-fry until soft and fragrant (~30-60 seconds).
  5. Add the tamarind mixture and stir-fry until aromatic (another ~30-60 seconds).
  6. Use immediately or store in an air-tight container in the fridge until ready to use.

Pro Tips

  • You can do this in a food processor, but you won't be able to pound.
  • Don't stare into the mortar while pounding, or you might get a hot shot in your eye.
