Roasted Garlic Compound Butter

This is what you use when trying to recreate the vegetables you get at teppanyaki restaurants like Benihana and Kobe Steakhouse. That said, it's highly probably that you can find other uses for this delectable admixture.

Ingredients

  • 8 tablespoons (1 stick) butter, room temperature
  • The cloves from two heads of roasted garlic
  • 1½ tablespoons whole milk
  • 2 tablespoons soy sauce
  • ½ teaspoon black pepper
  • ½ tablespoon lemon juice

Steps

  1. Add the butter to the bowl of a stand mixer.
  2. Using the whisk attachment, whip the butter at high speed and slowly add the milk.
  3. Once it's light and fluffy add the remaining ingredients and whisk until well incorporated.

Pro Tips

  • If you have or can buy whipped butter, you don't have to make it.
  • This will keep in the fridge in an airtight container for a couple of weeks.
