Souper Easy Tomato Soup

We've elevated plain old tomato soup with roasted garlic and harissa. Pair this with a grilled cheese sandwich and transcend to a new level of comfort food.

Ingredients

For the Tomato Soup

  • 1 can (~28 ounces) whole peeled tomatoes
  • 1 cup chicken stock, preferably home-made
  • 1 large yellow onion, chopped
  • The cloves from 1 head of roasted garlic
  • 4 tablespoons unsalted butter
  • 1½ teaspoons mixed Italian herbs
  • 1 teaspoon granulated sugar
  • 1 tablespoon harissa paste, optional
  • Salt and black pepper, to taste

Steps

  1. Prepare the roasted garlic, if you don't have some ready.
  2. Add the tomatoes to a 3 quart sauce pan. Use your hands to tear the tomatoes into bits. Alternatively you can use diced, canned tomatoes, but you'll need to add more stock. Do this in Step 7, if needed.
  3. Add ¾'s of the stock, bring to a boil, then reduce to a simmer.
  4. Stir in the butter, harissa, onion, oregano and sugar. Season with salt and pepper, to taste.
  5. Return to a simmer over medium-low heat and place a lid on the pot.
  6. Cook, stirring every so often, until the onions are somewhat tender (~20-30 minutes). Remove from heat and allow to cool for about 10 minutes.
  7. Transfer the soup to a blender, add the roasted garlic, and purée until smooth. Add more stock as needed to achieve your desired soup viscosity. You may want to rinse out the sauce pan at this point.
  8. Return the soup from the blender to the sauce pan and adjust the seasonings as needed.
  9. Reheat and serve.

Pro Tips

  • You can cut the butter in half on this recipe, and it will still be good. Any less butter, and you might find you're missing something.
  • We add sugar to counteract the acidity of the tomatoes. If you wish to omit the sugar, you'll need to cook the tomatoes for at least twice as long.
  • The harissa adds a kick that we really enjoy. You can use more or less, depending on your tastes. Sambal Oelek makes a decent substitute here, but it will change the flavor profile a bit.
