Soy Butter Glazed King Oyster Mushrooms

These shrooms are remarkably easy to prepare and delicious.

Ingredients

  • 2 tablespoons unsalted butter
  • 1 tablespoon light soy sauce
  • ¼ teaspoon dark soy sauce
  • ½ teaspoon honey
  • 1 clove garlic, grated on a Microplane or smashed and minced
  • ¼ teaspoon black pepper
  • 1 pound king oyster mushrooms
  • 2 tablespoons neutral-flavored oil, or as needed (see note)
  • 1 scallion, finely sliced for garnish

Steps

  1. Melt the butter in the microwave and stir in the soy sauces, honey, garlic, and black pepper. Mix well and reserve.
  2. Slice the mushrooms lengthwise into ¼-inch thick planks.
  3. Heat a large non-stick skillet or cast iron skillet over medium high and generously brush with oil.
  4. When hot, working in batches, add the mushrooms in a single layer. They should sizzle. Leave some space between them so that they brown rather than steam. Brush the tops with oil.
  5. Fry until golden brown (~5 mins per side), using a spatula to press down on the ones that bend up to get full-pan contact and uniform browning.
  6. Transfer the done ones to a plate and repeat with the remaining shrooms, adding more oil if needed between batches.
  7. Return all the mushrooms to the skillet, pour in the glaze, and turn off the heat.
  8. Toss the mushrooms in the glaze, using the residual heat of the pan.
  9. Garnish with chopped scallions and serve.
